Brrr!!  Its starting to get cold!

Isn't this just the most beautiful tree??  We found this gorgeous vision in Arrowtown in early May a couple of years ago.  What a vivid reminder that Winter is on it's way!

And of course, another great cold & flu remedy is one your Mum probably used to make for you... soup!  My favourite was always Tomato, but now, that I'm a Mum - it's Pumpkin.  And apparently, I'm pretty good at it!  tee hee...   As pumpkins are cheap at the moment here is my favourite recipe:

Linda's Pumpkin & Kumara Soup

1 T oil

1 onion, chopped

750g pumpkin, peeled & chopped

1 large kumara, peeled & chopped

4 c liquid stock (chicken &/or vegetable)

Hot curry powder

salt & black pepper

Heat oil in a large saucepan.  Add onion and cook until clear.  Add pumpkin, kumara, stock and curry powder to taste.  Cover, bring to the boil and until vegetables are soft.  Puree vegetable mixture in a blender.  Season with nutmeg, a swirl of sour cream or cracked pepper to taste.

I usually make a double batch, freeze half and we eat the rest for a few days - just remember to ensure your soup is heated through everyday (if on the stove) or store in fridge.  YUMMMM!!!!!!
